This Cajun chicken dish is ready and easy to make very quickly. I use homemade Cajun spice mix, but you can also use ready-made Cajun spice mix as long as there is no added sugar or starch in it.
I use fairly small sliced chicken breast in this chicken dish. So this is cooked very quickly. I do not add any onions or garlic, because the Cajun spice mix already contains onion powder and garlic powder. Most of the work is cutting the chicken breast and the peppers into pieces. I also add a can of diced tomatoes with juice. Choose tomato cubes without added sugar and with as few carbohydrates as possible. Here you can find my review of canned tomatoes.
- 600 grams chicken breast
- 1 green pepper
- 400 grams canned diced tomatoes
- 200 grams mascarpone
- 45 grams butter
